Select a quality blend, suitable for the production of coffee for the Moka. Fill the boiler up to the lower level of the safety valve, without exceeding it and using fresh water, possibly low in limestone. |
Fill the filter generously, without pressing the coffee powder, forming a small gutter and avoiding dust escaping on the edges of the boiler. Close the coffee pot, screwing the collector firmly onto the boiler and place it on the stove. |
The flame must never envelop the coffee maker, but remain inside the bottom of the same, in order to allow extraction in adequate times and not too quickly. As soon as you start to hear the typical Moka gurgle, the coffee is ready and you will need to turn off the fire immediately. |
Never let excess coffee boil: this would burn it, compromising its success and making it too bitter. Enjoy hot coffee, as soon as it is ready, remembering to mix the contents of the collector: the coffee extracted at the end, in fact, is less full-bodied than that leaked at the beginning of boiling. |

For those preferring a smoother coffee taste, the Bialetti 4-Cup Musa combines beauty and elegance in a tastefully designed stovetop espresso maker. Bialetti's legacy of quality and reliability lives on in this coffee maker crafted in high-quality 18/10 stainless steel (including the inner parts such as funnel & filter plate) with ergonomic, heat-resistant handle and lid. Produces 4 cups of rich, authentic Italian espresso in just 4-5 minutes. Note that max boiler capacity is slightly greater than the final output. Some water will be left in the boiler after brewing. The Musa is compatible with all stovetops, including induction cooktops. Stainless steel espresso pots are not dishwasher safe, hand wash only. Never use other contents besides coffee like teas, cacao powder, instant coffee or fine ground coffee as it will clog the filter plate. To use; fill the lower chamber with cold water just below the valve. Insert the funnel and fill it with ground espresso (do not tamp). Remove any coffee grounds on the edge of the funnel. Tightly screw the upper part of the pot on the base. Avoid using the handle for leverage. Select burner size to fit the bottom of pot. For gas stovetop, make sure the flame is not larger than bottom of pot. The flame should not come around the sides of the pot. Place pot on the stovetop until the water boils and coffee begins to come out of the center post. There will be a gurgling sound during this process. When the top of the pot is full of coffee, remove from stove. Hazel brown foam appears just seconds before the coffee is completely done. Before pouring coffee, stir it in the upper chamber with a small spoon to equalize all the different coffee layers for optimum flavor. Pro tip: go with the largest size possible / 10-Cup (15.5 Oz) (Like I did) so that you can make more cups of coffee. A typical cup of coffee (an Americano) for me is made with 350mL of water, and 1 and 1/2 tablespoons of coffee.
The largest size possible can hold roughly 525mL of water MAX, or 1.5 americanos using the directions above. Overall, would definitely recommend.
1. Never wash the pot with anything than hot water and never use soap to clean it.
2. Break the pot in/season it before you start making espresso. I used a strong coffee blend that I had on hand and made two (2) pots before finally committing the expensive illy coffee to the endeavor.
3. Put the coffee into the basket and level it off with your finger. Don't fill it on the bottom of the pot and DO NOT TAMP the grounds.
4. Have a small bowl of cold tap water near the stove (I will explain this later).
5. Microwave or pre-heat the water for the espresso to just before it comes to a boil. I use 8 ounces for the moka pot. You can also heat more and pour the extra into your cup to warm it up (Obviously, dump the water out just before you pour the espresso into it).
6. Add the hot water to the bottom of the pot and do not let it go about the blow-off valve.
7. Place the filter basket in the bottom piece and screw the top onto the unit.
8. Place the pot on the stove on high and watch the process. You can lift the lid and watch the progress. The coffee will start to come out dark and gradually get lighter as it gets to the end of brewing.
9. When you start to see the coffee running out light remove the pot from the burner.
10. Place the pot into the cold water (not above the seal) to stop the brewing process.
11. Swirl the espresso around in the pot for a second or two to mix the coffee evenly.
12. Pour and enjoy. If you are very disciplined and are going to save the rest for some reason, place whatever is left in a covered thermos to keep it hot.
Obviously, having a great coffee grind specifically for a moka pot is critical. The illy that I purchased is pricey, but the flavor is absolutely amazing and smooth. This and my new frother are letting me enjoy great lattes at a significant savings over what I've been paying at Starbucks.
My only regret is that I waited so long to finally make this purchase and start enjoying the coffee. If you're on the fence about purchasing one - don't hesitate.
I think it helps to start with a YouTube video how-to, then customize to your taste. I’ve seen several reviews that say you shouldn’t clean these. Ugh. I guess if you want the taste of old grounds and don’t mind your pot getting grimy, you can, but we prefer clean. And the coffee is great. It’s all a matter of tastes.
This is perfect for us. We just pre-boil the water in an electric pot, and set the bottom on a potholder so it can be safely screwed together with the water and the coffee basket. We also got a new coffee bean grinder so we get the grind correct for this unit, which is a little more coarse than what we used in Italy.
