How to make a perfect italian coffee

Fill the boiler up to the lower level of the safety valve, without exceeding it and using fresh water, possibly low in limestone. |
Select a quality blend, suitable for the production of coffee for the Moka. Fill the filter generously, without pressing the coffee powder, forming a small gutter and avoiding dust escaping on the edges of the boiler. Close the coffee pot, screwing the collector firmly onto the boiler and place it on the stove. |
The flame must never envelop the coffee maker, but remain inside the bottom of the same, in order to allow extraction in adequate times and not too quickly. As soon as you start to hear the typical Moka gurgle, the coffee is ready and you will need to turn off the fire immediately. |
Never let excess coffee boil: this would burn it, compromising its success and making it too bitter. Enjoy hot coffee, as soon as it is ready, remembering to mix the contents of the collector: the coffee extracted at the end, in fact, is less full-bodied than that leaked at the beginning of boiling. |

Note, I used this for the first time today and had zero technical issues. You need to use finer-ish grounds, and make sure to not add water over the gasket. Keep the stove heat on low (around 3-4) and turn it down once it starts brewing. Once it starts gurgling, it’s done. Do NOT press down/tamp the grounds like you would with an espresso machine, because again, this does not produce espresso. That will cause your coffee to burn. I’m not sure why so many people struggle using this, I think it’s very user friendly!
Edit a few months later: I just bought a 6 cup because the 3 cup wasn’t enough for me! Also, I recommend maybe purchasing a toothbrush or something small to clean the inside of the water chamber and the crevices where the coffee brews. I’m still in love with this product!
This yr I took another look on Amazon at these Bialettis to see if anything changed in QC & clarity of manufacturing location. Customers were happier now & it was thoroughly stated in more than one place that they are now indeed made where they should be,....ITALY!
I went ahead & purchased a cute little 3 cup Moka Express, after noting "MADE IN ITALY" stamped on it. It arrived quick & in pristine condition ( Thanks Amazon 😊). I was comforted even more when I took the moka maker apart; in 4 different places Bialetti has stamped into the metal that it's made in Italy. NICE!👍👏 I've used it several times now & there's no tarnishing, it still looks new. Bialetti has changed the handle material to probably a more heat resistant plastic that has a noticeable raised molding seem that runs along the top, & more notably, the underside of the handle. The lid knob is of the same cheaper feeling plastic. Otherwise, this little Bialetti looks & feels like quality 👌. It's easy to use, makes great strong coffee & is a simple breeze to clean. IMO, it's now well worth the $$$. Go forth & buy with confidence.
Update: 3wks later. I used sand paper to smooth out the sharp plastic seems on my Moka pot's handle, an easy fix. The metal has not tarnished & still looks new after many uses. * For those new to these coffee makers, a "cup" is incredibly small. It's less than a whiskey shot. Mine is a "3 cup" & fills my small coffee cup up to a little over half. I top it off with hot milk. So, if you want a full cup of industrial strength Black coffee, I'd recommend buying at least the 6 cup Moka maker. Hope this helps 🙏.

The 2-cup Tricolore Moka Expres has a design that's a blend of retro and contemporary. It looks gorgeous alongside a classic KitchenAid blender if you like a slightly retro kitchen. It's an absolute piece of art, and it makes good coffee.
Moka coffee historically was quite bitter due to boiling pre-ground dark Italian coffee quite hard. This lead people to call it "espresso". Moka is not brewed under much pressure, so it's not true espresso. What you get is a very concentrated small serving of coffee which draws strong flavors from the bean. If I brew the same coffee back to back in the Moka versus an Aeropress, the Aeropress is smoother and more balanced, but the Moka explodes with flavor like an espresso shot. They're very different experiences.
My recipe for light roast: Grind coffee medium-coarse as for Aeropress. Put freshly boiled water in the base, use a towel to close. Heat pot over medium-low heat with lid open. Watch until pot sputters. Closw lid and run cold tap water down the side to arrest boiling. Pour into one tall espresso cup or 2 mugs for 2 peoole. For black coffee, dilute with water to taste. For milk drinks, do the same, and top with milk. Frother optional but recommended. I do think even for 1 person, diluting with a little water really makes the Moka's coffee better.
I love the Moka Pot. They're very beautiful so you want to display it on your shelf. They're a little finicky if you want to get the best coffee from them, especially from lighter roasts. The Moka was designed for pre-ground dark roasts, which brew much more easily but produce an offensively bitter coffee to my tastes. If you instead use a good fresh ground specialty coffee and manage your heat, you can get an "espresso-like" cup for a fraction of the cost. Great for small shots or milk drinks. Highly recommended.
