Over the years, I've replaced the cooking grate with a hinged one for adding charcoal to the sides, made new handles from scrap wood twice, replaced the ash scrapers twice and added a thermometer. I just cooked beer can chicken in the middle, with perfect results, and evenly done. With a water pan under the meat, the grill works like a smoker. Put a layer of unlit briquettes on the bottom of both sides, light more charcoal in the chimney starter and pour half the lit coals on each side. The burning coals will start the bottom coals slowly so you don't need to open the lid and lose heat as often. The water cools the temp in the grill as it boils off at 212 and allows for slow cooking.
The reason is that this will keep your coals on the sides of the pit, and not on the middle. If you leave the coals in the middle, the airflow is significantly reduced and your temperature will drop fast when covering up the grill, no matter how much coal you use. You could also smoke 2 racks of ribs if you buy the accessory to keep them standing up. Just flip them every hour and use just a few coals and you'll be fine.
I've already grilled about 10 times using these, and they are strong and sturdy.
Installation is a bit tricky with the instructions provided, but all-in-all I dont regreat this purchase whatsoever.

I place the hinge openings directly over the rails and drop charcoal inside the rails as needed for indirect, slow cooking. It's a perfect set-up.
The hinged grate isn't a neccesity however. You can simply remove the regular cooking grate altogether, add some more coals inside rails, replace the grate and keep on cooking that chicken, turkey, brisket or what have you using the slow cook indirect method.
With these things you can keep an indirect, slow cooking coal arrangement going as long as you have coals.
You will have to learn how judge when you need to add coals. When you do add the coals I found it helps a lot to stir the old coals and knock the ash of them. It really helps to get the new coals going.
This is what you need if you want to roast a whole turkey or whole chickens without scorching them, I usually set an aluminum pan full of hot water (often with fresh sprigs of rosemary in it) in the center to keep the meat from drying out. (except for turkey that will cook for hours, cold water will steal too much heat)
while now and really love them, but for a higher
temp indirect heat, these rails are awesome. Have
used them a lot in the last few weeks and can just
not find anything bad to say about them.
I'm surprised, but they hold the charcoal where you
want it (sides or center) and does not interfere with
airflow nor ash drop. Great product and very nice fit
into the charcoal grill, well built and not at all flimsy.
