The 1k side:
Info: It’s a clay bound stone. You can permasoak it. It requires at least a 5 minute soak before use. The formula of the stone is designed for carbon steel, but it’ll work on stainless. It’ll cut super steels and high HRC knives, but sharpening those knives on this stone isn’t ideal.
Cons:
-Yes, it’s a soft stone, but that’s the only major downside.
-It loads up slightly in use.
-Will gouge with bad technique
Pros:
-As always with King stones, the feedback is great.
-Cutting speed isn’t actually that slow, contrary to popular belief.
-With light sharpening, sometimes I only see swarf on the stone, no mud.
-Nice feel
-Gives a misty kasumi finish
-Scratch pattern is even
The 6k side:
Info: Permasoak at your own risk. I’ve heard stories of the stone dissolving like a magnesia bound stone even though it’s resinoid bound. I use it as a splash and go.
Cons:
-Loads up slightly (but the metal can be rubbed off the stone with your hands)
-Smells weird
-Will be gouged by bad technique.
Pros:
-Not too soft
-Cuts fairly quickly
-With light pressure sharpening, I only see swarf on the stone with no mud
-Polishes to a near-mirror finish
-Great feedback
-Buttery, creamy feel
-Even scratch pattern
The 6k side shouldn’t be soaked and dried out often, resinoid stones will crack when you do this. Either permanently soak or use as a splash and go.
Note: My stone arrived without any chips or cracks, FWIW.
So if you're looking for a great combo waterstone to sharpen your higher end chef knives, (Shun, Global, Trident, Henkle, including sushi chef knives, for a very reasonable price, look into this combo stone and do your own research... for price to quality ratio, this is a steal!!
Thank you for such an awesome combo waterstone for less than $50! So far my two chef's and a visiting chef have all been impressed as to the sharpness of my Shun Premier!! (What is a dull chef knife called? A metal spatula!)
Instead of buying the cheaper stone first (King) and eventually settle for this one, I would instead suggest to go with this one since it is superior.

I was able to get much better edges on my knives immediately with ease. I am still not getting razor sharp results like the videos I watch, but still getting excellent results (I am just getting used to the stones). My knives are all slicing far better than ever before and the stones are much cleaner and better than any natural stones I have ever used. I also love the fact that the stone is much larger than any natural stone I have ever seen and they don't chip on the edges like natural stones (which makes a stone useless).
I am going to buy another 3000 or 4000 grit stone just because I think it might be more efficient than going directly from 1000 to 6000.
